Apple Upside-down Cake
Honey Caramel Apple Layer
Ingredients
2 firm apples, peeled & sliced
6 tbsp unsalted butter
1/3 cup honey
¼ cup coconut sugar (swap for granulated)
Instructions
Melt butter in a skillet over medium heat.
Add honey + coconut sugar and cook 2–3 min until thickened and glossy.
Add apples and cook 5–7 min until softened and caramel-coated.
Pour into the bottom of your cake pan.
Cake Layer
Ingredients
8 tbsp unsalted butter, softened
1 ½ cups all-purpose einkorn flour
↓ Adjusted leavening for einkorn ↓
1 tsp baking powder (NOT 1½ tsp — einkorn requires less)
½ tsp baking soda (added to balance coconut sugar → mild acidity)
1 tsp cinnamon
½ tsp ground ginger
¾ tsp salt (slightly reduced for einkorn’s mild sweetness)
½ cup coconut sugar (replaces granulated)
½ cup coconut sugar (replaces brown sugar)
2 large eggs
1 tsp vanilla
⅓ cup raw milk + 1–2 tbsp extra if batter seems thick
(Einkorn absorbs liquid differently — flexibility included.)
Instructions
1. Prep
Preheat oven to 350°F.
Grease a 9-inch cake pan (lined with parchment if possible). Add caramelized apple mixture to bottom.
2. Mix Dry Ingredients
In a bowl whisk together:
einkorn flour
baking powder
baking soda
cinnamon
ginger
salt

3. Cream Butter + Sugar
In a separate bowl beat:
softened butter
1 cup coconut sugar total
Beat for 2–3 minutes (this helps structure since einkorn is low-gluten).
4. Add Eggs + Vanilla
Beat in:
2 eggs
1 tsp vanilla
Mix until smooth.
5. Add Dry + Milk (Gentle!)
Add dry ingredients + milk in two rounds, stirring by hand with a spatula.
IMPORTANT:
Einkorn gets gummy if overmixed.
Stop mixing as soon as it's combined — batter will be slightly thicker than classic cake.
6. Bake
Pour batter over the apple layer.
Bake 35–42 minutes, or until:
top is golden
toothpick comes out clean or with a few crumbs
Let cool 15 minutes before flipping onto a plate.
